What is cocoa liquor?

Cocoa liquor, also known as cocoa mass or cocoa paste, is the key to great chocolate and it provides the taste signature of the recipes in which it is used. ofi's sourcing, processing and packaging capabilities allow for exceptional quality cocoa liquors as the flavor of cocoa liquor is dependent on three distinct, yet equally important factors: 

 

  • the type of cocoa bean (benefiting from ofi’s selection and blending expertise),

  • development of the flavor precursors in the cocoa bean during fermentation and drying, and 

  • the further enhancement of flavors that occurs during fully controlled roasting processes.
